HAWAII PINEAPPLE MANGO ICE CREAM

 

UTENSILS:

  • Ice Cream Maker
  • Food Processor
  • 2 Saucepans
  • Measuring Cup
  • Whisk
  • 2 Cups
  • 1 Medium Bowl
  • 1 Spatula

INGREDIENTS:

  • ½ cup chopped fresh pineapple
  • ½ cup chopped fresh ripe mango
  • 1 cup sugar
  • 2 tablespoons pure vanilla extract
  • ½ cup water
  • 1 quart heavy cream
  • 8 egg yolks

DIRECTIONS:

  1. Add pineapple to food processor and pulse several times; remove and set aside in cup.
  2. Add mango to food processor and pulse several times; remove and set aside in cup.
  3. In a saucepan - mix in water, sugar, pineapple and mango.  Simmer the mixture over low-heat for about 4 minutes; to instill flavors.  Remove from heat and cool completely.  Mixture should not be dry.
  4. Pour vanilla extract and eggs into a medium bowl; whisk together.
  5. Pour cream into an empty saucepan and bring to a gentle boil over medium heat. Turn down to low heat.
  6. Remove 1 cup of hot cream from saucepan.  Then whisk hot cream into the egg/vanilla mixture.  Mix thoroughly.
  7. In a steady stream, slowly whisk the egg/hot cream mixture into the hot cream in the saucepan.
  8. Cook for 3 minutes over low heat; stir occasionally.  Remove from heat and stir in mango/pineapple mixture.  Cool in refrigerator completely.
  9. Add the fruit/cream mixture to the ice cream machine.  Process according to the ice cream machine's directions.

Garnish with toasted coconut flakes. Makes six – ½ cup servings.

 

HAWAII FRUIT CRUMBLE

 

INGREDIENTS:

  • 2 cups thinly sliced apples
  • 1 tablespoon lemon juice
  • 1 cup crushed pineapple, drained
  • 2 cups cranberry sauce
  • 1 cup quick cooking oats
  • ¾ cup packed brown sugar
  • ½ cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ cup butter

DIRECTIONS:

  1. Preheat oven to 350° F.
  2. Toss apple slices with lemon juice.
  3. Place apples in a 10x6x1½ inch baking dish.
  4. Spoon pineapple evenly over apples, then cover with cranberry sauce.
  5. Mix oats, brown sugar, flour, cinnamon, and salt.  Cut in butter till crumbly.  Sprinkle over fruit.
  6. Bake for 30 minutes, or until apples are tender.

Serve warm; makes 6 servings.
